And just like that the trees are naked. And the piles of leaves I did not pick up are blown away elsewhere. I am near St. Louis, Missouri, USA...and their weather is crazy. Eighty degrees F yesterday but cool and extremely blustery today. This cold front has me in the mood for cold weather food....stuff like chili. We'll be having beef stew however as those are the ingredients available (and I am in no mood to go to the store in this wind). So - what is your to-go-to cold weather food?
Taco Soup Kayla Chamberlain 1 lb hamburger 2 (15 oz) can whole kernel corn (don’t drain) 2 (10 oz) cans tomatoes with chilies 2 (15 oz) cans kidney beans (drained and rinsed) * note - if you have a small family only use 1 can of corn, tomatoes, and kidney beans. 1 envelope taco seasoning 1 (10 oz) can tomato soup 1 cup water Doritos Grated cheese Brown meat and drain off excess grease. While meat is browning heat all other ingredients (except Doritos and cheese) in a large pot. Add browned hamburger and simmer until everything is heated well. You can also put it all in a crockpot and let it simmer on low all day to blend the flavors even more. To serve, crumble Doritos in a bowl and spoon soup over the top and sprinkle with cheese. It’s also yummy with sour cream stirred in.
It’s raining here in Utah. Our weather has been all kinds of crazy this year - in the 80s nice, then cold and rainy or snowy. Mother nature doesn’t know what to do. The taco soup recipe above is an easy one with mostly shelf stable ingredients. I stocked up on the canned foods during caselot sales. I also freeze up packs of taco meat when I buy a huge pack of hamburger at Sam’s Club. It makes this taco soup a dump and go meal for the crockpot on cold winter days.
Grilled cheese sandwiches and tomato soup was always a favorite growing up. Mac and cheese actually sounds good on the very windy day today.
Oh yes: this. A comfy and cozy cold-weather classic! My mum used to make us tomato soup with grilled cheese sandwiches. Pure comfort food.
We love Cincinnati Chili or a good old beef roast with mashed potatoes and Yorkshire pudding. Now I'm hungry.

I love cheese. I love Mac and Cheese. My hubby can't stand it. I have no idea why. Sometimes I make it simply for myself (and then feel bad because he won't eat it).
I am a fan of lentil soup...I just haven't mastered making it. Hmmmm....might have to give it a go again.
definitely soup...favourites over winter were garden vegetable, bacon & corn, tomato & basil, lamb and vegetable and chicken and vegetable. I had them pretty much every day over winter with some homemade gluten free bread
I love beef stew for those cold, windy days on a weekend when you can let it stand on the stove for hours. On weekdays I’m more of a soup person, lentils or veggies soup are fast food and perfect on a rough day.
yesterday I made this cauliflower pumpkin gratin ... ` - Spice pumpkin cubes with curry, turmeric, pepper and salt. some olive oil on top and bake in the oven for 15 to 20 minutes - steam cauliflower florets - use half the cauliflower to make cauliflower cheese sauce - put the other half in an oven dish together with the pumpkin cubes - cut a thick slice of cooked ham into cubes and place over the vegetables in the oven dish - pour the cauliflower cheese sauce over the vegetables - some gratin cheese on top and briefly under the grill ... yummy ...
