I figured out, this morning, how to change the thumbnail on my layouts, so that the two-page layouts don't look weird. There's a "change thumbnail" button option in the gallery. Super easy.
@Spacecadetswife I tried this and all it does is bring up an option to upload a new thumbnail. It is not an option to tweak the size of the layout. Maybe I am not seeing what you are talking about?
I keep hoping that the gallery will eventually be updated to fix this, because honestly I will not be changing almost every thumbnail in my gallery, whether it's tweaking or reuploading. I don't have that many double pagers but most of my gallery is made up of non-square LOs and the thumbnails are all cut off. I don't like it, but I don't hate it enough to click on every single one and change it individually.
No, you're right. You have to make your JPEG ahead time. I mean, you have to crop your two-page layout to a one page, and then load that JPEG as your thumbnail. It's tedious. I prefer double layouts. That is how I scrapped in paper and my first few years of digi. I only switched to single pages last summer when I started doing challenges. I buy almost all the double templates I find but I do a lot of single page duplicated and rotated/flipped for the other side, too.
