What's For Dinner?

    I do the same thing - try to play 3-5 dinners for each week, but don't always design a specific day for each recipe. This week I have a loose menu:

    Monday - chicken curry with coconut milk (this wasn't as good as I was hoping)
    Tuesday - something with chicken
    Wednesday - we're eating at church
    Thursday - black bean quesadillas
    Friday - crunch wrap tacos using ground turkey

    Last night I made my seriously rad chicken pot pie.
    Tonight, leftovers of that for the boys b/c Ella and I are going to attempt summer clothes shopping. Please send tequila.
    Tomorrow night I'm making ham and rice soup.
    Friday night I'm doing Blistered Ranchero Eggs. SO good.
    This weekend, not sure. Eric will be gone so the kids and I get a little bit lazy when he's not home and I hate to cook a huge meal when he's gone. I have some frozen homemade chicken soup in the freezer, may thaw that.

    last night it was bean burritos with yummy crock pot overnight beans.
    tonight..... who knows.

    well, many of my meals I planned for last week didn't get used, so here I am with a new week and many of the same meals planned :giggle

    I think the plan for this week is

    - Turkey smoked sausage with peppers & onions, green beans & red potatoes
    - stuffed peppers (never got around to those last week), Brussels sprouts with apples & bacon
    - Baked fish coated in Kraft Fresh Take... yum, and SO easy; asparagus
    - Pork tacos (also never got around to making these either), black beans & salsa
    - Chicken & spinach tortellini soup (this is a stand-by meal for us that we eat a few times a month... kids LOVE it)
    - Homemade pizza
    - Turkey burgers with pineapple & salsa, roasted sweet potatoes

    hmmm, we are going out for dinner for my step-sister-in-laws graduation. Yesterday was salmon burgers, tomorrow san choy bow, then duck and asparagus risotto.

    I got home from work, everyone had dinner except me. So I found a bowl of beef in the fridge, threw some cheese and salsa into it, warmed it up and ate that. Horrible! But not too many carbs in it hahahahaha!

    I made Ree Drummond's Perfect Potato Soup recipe tonight. It was gooood.
