This looks great! And loaded with veggies. You could add cooked chicken, too

Yes that would probably work. I don't eat meat though. :-)

I’m always on the lookout for ways to make vegetables a more exciting part of the meal

It's been awhile since I tried any new recipes, I think this may have been the last one I made https://www.weightwatchers.com/us/r...key-apples-and-thyme/5bdf7ab083c5f80026ad096a I made it with chicken instead as turkey isn't a major protein here outside of Christmas time (and when it is here its extremely expensive)

I'll also add my main pinterest board that I add stuff to that I'd like to try if anyone is interested (it's gluten free recipes or ones that I can adapt to be gluten free and for the majority of it I try and stick to healthy stuff) https://www.pinterest.nz/jmcdon87/gluten-free/

The squash/Turkey/apples one looks great and I’m sure also with chicken. And thanks for the pinboard!

My favourite dish is shakshuka. It’s basically tomato’s, bell peppers, onion and eggs. It’s simple and quick to make in only one pan, it always tastes good and is low on calories.
I always make this HelloFresh version with goat cheese but there’s plenty of variations.

I don't see one either Michele. I've had that a couple times where I thought maybe someone meant to post a Bart and I kept waiting for it to load, but there wasn't one. :giggle Trying to throw you guys off the scent! Ha ha!

I ended up finding Bart in another thread within a minute or two of posting that, so I'm all set for my chance in the random draw. :tu
